It’s the time of year to enjoy some special seasonal flavors. Right now cranberries are available in the grocery store and oranges are abound and make a nice combination. The recipe I’ve come up with is a cranberry orange relish or cranberry orange salad. There are just 3 ingredients: 1. 5 cups of cranberries, 1 whole orange and 1 tablespoon of honey. Check out the video to see how it all goes together in under a minute!
The Health Benefits
Of course, I can’t leave you with a quick and easy recipe without touting the health benefits!
First off, you get loads of antioxidants in the cranberries and orange, especially since they are raw, you will also get the live enzymes present in the fruit. The orange is whole, including the peel, so you get a nice burst of essential oil for flavor as well. The inner part of the peel, the white pith contains bioflavonoids which work together with the vitamin C to boost the immune power of the fruit. And then the touch of local honey also contains both antioxidants and immune boosting properties as well.
You will get a strong, tangy flavor and nice texture in this dish, so it makes a nice accompaniment to richer dishes, like turkey and roasts. It’s also nice to top yogurt or eat at the end of the meal instead of dessert to clean your palate.
Finally, it’s such a simple recipe that it’s suitable for many people who may have diet restrictions. The recipe is Top 8 Allergen free, it’s vegan and paleo, it’s raw and can be made 100% sugar free, if you prefer to use stevia. Think of it as a safe food for pot lucks that will also be unique and colorful. Guests will be impressed and it will only take you a minute to put together!
